Since washing dishes at an Italian restaurant early in his career, Mr. Thompson has always nourished his passion for culinary arts. He began his culinary journey as an intern working under prolific chefs such as Julia Child and Ming Tsai. He earned an Associate of Arts in culinary arts from Johnson and Wales University in 2001 and immediately began cooking professionally across the globe, notably in London, New York, and Colorado. Upon relocating to New Mexico, he noticed a lack of variety in certain culinary offerings. Drawing inspiration from a Thai restaurant he frequented in London, he established himself as the owner of Great Noodles Food Cart from 2008 to 2018.
Riding the successes of his noodle cart, Mr. Thompson expanded and subsequently established Donabe Asian Kitchen in one of the oldest buildings in the center of the Taos art scene with the intention to serve his own brand of inspired Asian fusion cuisine. Met with positive reception from day one, he regularly updates and refreshes his menu in order to cater to both the local and tourist populations of Taos. Not only does he cook on the line, but he manages the restaurant’s marketing, finances, inventory, and staff. For his accomplishments, he is proud to have been featured in the Wall Street Journal in 2010. Looking ahead, he aims to open additional locations in neighboring towns with the long-term goal of achieving national recognition.
