Since 2016, Mr. Paddio has flourished as owner and operator of Shells and Tails 2 Geaux, a premier restaurant in DeSoto, Texas that offers authentic Cajun food including crawfish, snow crab, shrimp, gumbo and for dessert, praline and rum cake. Originally hailing from Lafayette, Louisiana, he was steeped in the cuisine from a young age when he spent a lot of time with his grandfather learning about food, vegetables, and spices as his family had a three-acre vegetable garden when he was growing up.

After serving in the Army National Guard from 1998 to 2004, winning several awards and commendations, Mr. Paddio obtained a Bachelor of Business Administration from the University of Louisiana at Lafayette in 2006. Initially, he worked as a patrol engineer with Halliburton, the energy services corporation based in Houston, specializing in fracking, a method of extracting natural gas and petroleum. The position called for him to be away from home for a month at a time, and after marrying and fathering children, he decided to found a food truck business and later a brick and mortar restaurant. Shells and Tails 2 Geaux has been recognized as one of the Newest and Hottest Trending Cajun Spots in the Dallas–Fort Worth area by the Dallas Observer, among the Top 10 Best Cajun Spots in the Dallas-Fort Worth area by the Dallas Morning News.

Mr. Paddio’s most notable achievement would be his children. His wife had four miscarriages which was very devastating for them and so he considers his children his pride and joy and puts them above everything else. In the coming years, Mr. Paddio hopes to expand his business to other locations in Houston, San Antonio and Austin.
