For more than 20 years, Mr. Koep has excelled as the owner and pastry chef of Steam Tube Productions Inc., Fendu Boulangerie in Honolulu, Hawaii. Specializing in pastries of all kinds, as well as bread, croissants and pizza, he builds off earlier experience as an executive pastry chef of two hotels on the island of Lanai in 1990. His first job was in a French restaurant owned by two German men. Over the course of his career, Mr. Koep has maintained professional membership with the Bread Bakers Guild of America and also donates baked goods and desserts to Aloha Harvest and the Women’s Fund of Hawaii. He is also an active volunteer for foodservice forums at local high schools.
Reflecting on his career thus far, Mr. Koep considers his most notable achievement was being able to study with and learn from Albert Kumin at the International Pastry Arts Center in New York between 1984 and 1989. Additionally, he also studied at the French Pastry School in Chicago and the National Baking Center at Dunwoody Institute in Minneapolis. Mr. Koep’s mother is fond of the fact that he got to make Bill Gate’s wedding cake. Attributing his success to hard work and dedication, as well as being dependable, Mr. Koep hopes to continue running his business to achieve even more success until his time comes for retirement. In his spare time, he enjoys gardening, building things and classic cars.
