With over two decades of experience to her credit, Ms. Knight currently has found a wealth of success as an accomplished restaurant owner and model. Since 2019, she has served as the owner of Mama Roux in Newburgh, New York. She also serves as the co-owner of Ms. Fairfax, another highly recommended restaurant in Newburgh. As part of her responsibilities at both restaurants, Ms. Knight manages human resources, oversees the kitchen and mentors staff members.
From an early age, Ms. Knight’s parents inspired her to pursue her passions, including in cooking, hospitality and modeling. Over the course of her career, she operated as an international model for over 17 years, traveling to many parts of the world. Primarily working with Ford Models, she grew to miss many of the foods from her hometown in New Orleans, so she taught herself to cook, as a means to bring her culture with her wherever she went. After modeling extensively in Chicago, Ms. Knight left her modeling job and subsequently managed several Chicago restaurants and the Chicago Athletic Association from 2010 to 2018, before opening her own restaurants in New York in 2019.
Adjacent to her primary vocational endeavors, Ms. Knight is also well regarded for her creative output. Throughout her vocational journey, she has contributed articles in many professional journals. She is also certified as a sommelier and in southern wine and spirits. To commemorate her accomplishments in the field, Ms. Knight was previously recognized with the Manager of the Year Award by the Chicago Athletic Association.
Ms. Knight attributes much of her success to her upbringing and to her parents, who served as a constant source of inspiration and support. In light of her accomplished career, she is most notably proud to have owned and operated many successful restaurants and to offer quality food to her customers. Furthermore, she is proud to have been recognized in her industry on several occasions. Looking towards the future, Ms. Knight hopes to find further success at Mama Roux, though she intends to step back from the business in a minor capacity to focus on other ventures, such as another new restaurant.
