With nearly 15  years of experience to his credit, Mr. Baldarotta has excelled as the co-owner and executive chef with Baldarotta’s Porketta & Sicilian Sausage since 2019. Prior to these positions, he worked as the co-owner of a catering business from 2017 to 2019, a sous chef for a catering company from 2015 to 2017 and a kitchen manager for a local restaurant from 2013 to 2015. Mr. Baldarotta began his career at a Holiday Inn Hotel and Conference Center, for which he served as a catering houseman and server from 2008 to 2009, an assistant operations manager from 2009 to 2012 and the catering operations manager from 2012 to 2013.

Before embarking on his professional path, Mr. Baldarotta graduated with a diploma from Urbana High School in 2005. He subsequently completed coursework in mass communication at Parkland College between 2005 and 2007. Obtaining his food handler manager license soon thereafter, Mr. Baldarotta decided to establish his own restaurant after years of fostering his passion for cooking.

Beyond his primary responsibilities, Mr. Baldarotta has participated in numerous endeavors outside of his areas of expertise. He had been additionally active with FedEx in Champaign, Illinois over the years. Furthermore, he has contributed to the local unhoused population and those in need throughout his community, and proudly provides discounts on catering orders to local schools. As a testament to his stellar efforts, Mr. Baldarotta has been honored by The News-Gazette for being #1 in Italian Cuisine between 2020 and 2021, #1 Family Friendly Restaurant in 2021, #3 in Ice Cream in 2021, #1 Sandwich for three years and #1 Overall Restaurant for two years.

Attributing his success to his hard work, passion and the support of his family, Mr. Baldarotta initially established their restaurant as a drop-off catering business in 2019 after garnering a wealth of knowledge in the hospitality industry. Among the highlights of his career, he is grateful to have been acknowledged for his success by the News-Gazette as it was an indication that his restaurant was bettering the community where had had been raised. Looking toward the future, Mr. Baldarotta hopes to create a new concept for Baldarotta’s Porketta & Sicilian Sausage and acquire the James Beard Foundation Award for offering his community high-quality products and inspiring others.
