Drawing inspiration for Chocolate Lab from a lifelong hobby, Mr. Simonson first began his career as a special education teacher at the School for the Deaf in Wisconsin, after which he transitioned toward the corporate sector as a project coordinator for UL Solutions from 2003 until 2015. Throughout this time, he often shared his savory chocolate treats with friends and family, who encouraged him to sell his unique creations to the world at large.
Outside of his work in culinary service, Mr. Simonson engages in civic work related to Project Angel Heart, the Colorado Rockies Foodbank and HIV prevention and awareness campaigns. Likewise, he commits a great deal of effort to outreach on behalf of the LGBTQ community.
Among his accomplishments at Chocolate Lab, Mr. Simonson is most proud to have succeeded in a challenging industry without professional training, and to have been recognized for his efforts by many culinary experts. Moreover, he is gratified to have cultivated a safe space for everyone to enjoy, regardless of race, sexuality or creed.
