Since 2016, Mr. Gauci has found much success as the proprietor of Malta Joe’s Baked Goods in Tucson, Arizona, in which he produces pastizzi, a popular diamond-shaped Maltese pastry made with filo dough surrounding various fillings, most often ricotta cheese or curried peas, though Malta Joe’s also sells pastizzi made with bacon as well as special “pastizzi dogs” made with frankfurters. He also distributes vegan-friendly versions.
Prior to becoming a baked goods distributor, Mr. Gauci prospered in the recording studio. After earning a bachelor’s degree in communications from SUNY Westchester Community College in 1985, he served as an assistant engineer with Bearsville Recording Studio in Bearsville, New York from 1986 to 1988, as chief engineer with Pomann Sound from 1984 to 1998, as sound designer and production engineer with Nutmeg Audio Post from 1999 to 2002 and as owner, video editor and sound designer with Maltajo Productions from 2004 to the present. He received certification in film production and editing at New York University and in audio technology at the Institute of Audio Research in New York. For Mr. Gauci, the pinnacle of his recording career was when he was involved with the production of Nickelodeon’s “Doug” cartoon. As the sound designer, he was with a team that worked on every single episode of the show. Enthusiastic about the future of Malta Joe’s Baked Goods, he recently purchased a building in Tucson that will serve as a factory for his pastizzi production with a cake division, a cookie and pastry bakery and custom cake building beginning in January 2023. Looking toward the future, Mr. Gauci plans to turn his products into a household name.
