Despite facing uncertainty during the COVID-19 pandemic shutdowns, Ms. Rasmussen’s determination prevailed. The grand reopening of Rachel’s Roadside Bar & Grill drew an overwhelming response from customers and marked a defining moment in her career, affirming her ability to overcome adversity and demonstrating that banks now recognized the value of her enterprise.
