The refinement of this signature product, accomplished through extensive experimentation with salt and water temperatures to achieve the ideal flavor and texture, has garnered widespread acclaim, often drawing favorable comparisons to products from esteemed producers in Northern New Jersey and New York.
Family plays an integral role in the business’s daily operations. Mr. Picinich’s father, who learned the art of cheesemaking, a skill in which Mr. Picinich now excels, manages one of the company’s two farmers’ market trucks. Meanwhile, Mr. Picinich operates the other truck. His sister supports operations at North Jersey markets, and his mother assists with various household responsibilities that support the business’s success.
Before founding Caldino’s, Mr. Picinich was the president of Spirit Nation LLC from 2015 to 2017, where he gained valuable experience in business management and entrepreneurship. In 2015, he also worked as a banquet chef at The Terrace Biagio’s, honing his skills in large-scale food preparation and event catering.
Mr. Picinich’s earlier roles included serving as a line cook and lead line cook at Life Café, Lifetime Fitness, in 2014, where he developed expertise in high-volume kitchen operations and team coordination. From 2012 to 2013, he was a prep chef and line cook at Valantino’s, where he refined his culinary techniques in an Italian restaurant setting. Mr. Picinich began his professional journey as a line cook at Bubba’s Dog House in 2011, gaining foundational experience in fast-paced kitchen environments.
In preparation for his career in the field, Mr. Picinich acquired an associate’s degree in culinary arts and a Bachelor of Arts in food service management from Johnson & Wales University, completed in 2016. This formal education provided him with advanced culinary knowledge and essential management skills that have been instrumental in his professional achievements. Furthermore, Mr. Picinich held several ServSafe certifications, underscoring his commitment to food safety and responsible service standards.
Civic involvement has been a consistent theme throughout Mr. Picinich’s life. In 2011, he contributed as a bagger and sorter at Fairlawn Food Pantry, supporting local hunger relief efforts. He also gives back by sponsoring youth athletics. Notably, Caldino’s is a major sponsor for a local school wrestling team. Additionally, Mr. Picinich contributes to various Italian societies through donations and event participation.
Mr. Pinich’s passion for cooking was cultivated at an early age through family traditions with his grandmother and mother. He began cooking at age eight and entered the workforce at 16, gaining hands-on experience across fast-food establishments, boardwalk eateries, Italian restaurants and catering halls. After college, Mr. Picinich invested his savings into building his first farmers market truck, a pivotal step that led to the launch of Caldino’s.
Mr. Picinich attributes his success to a strong work ethic, dedication to long hours and unwavering support from his family, especially his parents, whose contributions have been vital to achieving his current level of accomplishment. Looking ahead, he is focused on enhancing product quality at Caldino’s while expanding its market presence through wholesale distribution to retail stores, catering halls and restaurants. Mr. Picinich also plans to broaden the company’s farmers market footprint, particularly in North Jersey, and formalize its business structure by seeking guidance on incorporation.
